Chicken and Waffles from Waffles and Wedges
The owner of the Pbon’s truck opened up a small food establishment this year on Pine street where Mexico on the Square used to be. There is one small table inside and a few on the corner, so this is mostly a take out operation. We were able to grab a table. Having essentially two menu items, waffles and potato wedges, might seem to make ordering easy- but the toppings are endless so you might want to come with a game plan. I wanted to make sure I made the perfect order.
I picked a popular pre-set combo- the Waffle Chick that puts breaded chicken nuggets and honey on a liege waffle. To this, I added a “Spice up your Life” dipping sauce that I felt add another appreciated flavor and texture element. The chicken nuggets seemed to be made of good quality white meat and were likely baked instead of fried, so I decided I deserved to slather all the sauce I wanted on top. Restrained decadence you could call it.
To balance out the savory, we crafted a sweet waffle and I think we nailed it- chocolate syrup, speculoos, and bacon pieces. The waffle is on the smaller side, but the toppings are generous. Without the bacon, there may have been too much sweetness, proving the importance of a well thought of order. You can use this as a test of your dining companions palette and quick thinking abilities. This combo is definitely worth replicating and would be perfect for brunch.
