Pretty in Pink: The Soup Edition

Over a year ago, on a warmer day, I discovered how much I enjoyed the gazpacho and fresh sandwiches at Le Bus.  Now that it’s warming up, (on and off) I had a craving for that gazpacho again. But another soup, the color of pepto bismol, tempted me instead. Ok, I realize that doesn’t sound tempting, but it was delicious, I promise!

Like the gazpacho, Le Bus’s borsht is served cold, though you could warm it up if you like, there is no reason for that- it is so refreshing when cold. It has the requisite seasoning of dill and chopped pieces of beets, but isn’t completely traditional; it is made with buttermilk. But it is still very satisfying and I couldn’t stop slurping it. All soups come with a roll, the raisin loaf went nicely to pick up the sweetness of the beets.

  • You are probably more familiar with the Ukrainian or Polish varieties of borscht (which I love). That pink kind is a traditional Lithuanian borscht. I’ve never seen it anywhere where I could try it, but I’d love to.
