Foolish Waffles’ Take on a Banh Mi

The Foolish Waffles truck is only a few months old. More of a savory gal, I was really intrigued by the meat topped waffle options. I tracked the truck for a few weeks, finally finding a convenient location for me to check them out.

I was nervous that the truck wouldn’t have the banh mi with pork belly that made my pupils dilate when I read about it on the menu. That’s the things with trucks, you can get really pumped for a dish only to find its been sold out or not on the menu that day. I am happy to report that was not the case.  The  Brussels style waffle holds coriander-black pepper pork belly, pickled red cabbage, sliced jalapeños, cucumbers, cilantro, and togarashi sauce ($8.50).

I am happier to report that this is the pork  belly that dreams are made of; braised into soft, meat clouds with a crispy outer layer. The pickled cabbage and cilantro brightened it up and the togarshi sauce added creaminess and spice. The waffle was light and crispy, though I don’t think I paid enough attention to it because the toppings were so good.

I was a really bad girl. There was a  sweet waffle that sounded too good to resist. So, I went ahead and also ordered the  Berry Cheesecake Waffle ($6.50) that contains jam and housemade New York cheesecake and is then topped with mascarpone whipped crème and berry compote. Plus I added toffee bacon (.75 cents) because it wasn’t quite decadent enough. I loved that it wasn’t too sweet; the whipped creme wasn’t the sugary kind. The waffle was completely amazing and I ate most of despite not being one who normally eats a full desert and despite having just eaten an entire savory waffle. It’s not that the waffles are too small, they are just that good. I may have found my new favorite food truck.

  • From the looks of the food, I’m guessing you weren’t the only diner with dilated pupils…

    Looks tasty, but slight rant: what about that waffle is exactly bruxellois? If every non-Eggo waffle is somehow from a low country, does the distinction become meaningless? I know like maintianing JCVD’s career, I’m losing this battle.

    Brussels: light, crisp, rectangular waffle
