I have never seen a proper French Dip in Midtown. Bistro on 51st and Park sometimes has a big beef brisket (or some other stringy cut) in the steam table by the grill, and will carve a big hero for you for about $7.50. They will dunk the bread in the jus if you ask, or will more than likely give you a container of it on the side (they're a very accomodating crew). BUT, the jus just isn't right. It's more like fatty, salty water. They do have "brown gravy", but I've seen where it comes from: right out of a gigantic food service aluminum can <shudder>.
Best bet: The Tri Tip Grill. It may not be a proper French Dip, but it's freaking delicious.

Def Tri Tip Grill is the best bet!
Otherwise--- Tonic Times Square actually has a good French Dip for $8.95 (maybe get it "to go"?)

I get the french dip from Sandwich Planet on 9th and 39th on occasion; not bad, the jus a little thin though.

Depending on how far north you are, defonte's of brooklyn on 21st and 3rd is awesome. They charge for delivery (at least to 46th they do). You can't beat the sandwich though
