For Bangkok, my advice is to just eat at the night markets. Forget about sit down restaurants!

Hey... I am going to East Asia for two weeks starting on Saturday and will be visiting Bangkok, Saigon, Ko Samui, and Ko Pha Ngan.
So excited and heard the food there is great. Any advice on where to eat? I am looking for anything ranging from street food to fine dining. I would post on chowhound but I trust this board more.
