tipping etiquette at carts?

never really tried this out of the regular bars i go to... i would feel a little scared that it wouldn't work.. haha... i usually do it at places that have already given me a free round.. then i start doing it...
i remember... i did that once... at a bar I go to on a regular basis... (given it was on my birthday).. and they gave me a bottle of grey goose... probably the best benefit i've gotten from the $20 tipping thing..

i also do the 20$ tipping at the begining at my regular bars....

I tried to tip Papa Perrone once, just after New Years' (cause he is so effing nice). He refused and said that my repeat business was tip enough.
Has anyone tested those meatballs for crack content?

Hey guys, got a maybe weird question - do you guys tip street cart guys you buy your food at?
Today I went to a cart I never been to today, guy was very pleasant, had a nice conversation and I tipped him afterwards.
After, I felt weird about it, because he didn't have a tip jar out like some others do.
Maybe I was being presumptuous, I don't know I'm probably just being weird.
What do you guys think?
