Thanksgiving menu

It has nothing to do with Midtown lunch but at least it's food related.
I am hosting a thanksgiving dinner this year and I got all my recipes from Epicurious.com.
Will be making, porcini mushroom turkey with mushroom gravy, leek and wild mushroom stuffing, roasted brussel sprouts with toasted pine nuts, roasted broccoli with toated panko, roasted rosemary potato, cranberry sauce with port and tangerine, bacon wrapped dates, maple pecan pie...

What is your menu?

    The way I make my turkey is this:

    Herbed butter under the skin
    Then wrap the whole thing in bacon
    Halfway through, remove bacon
    But add more bacon around turkey

    It's never dry!

    Oops, I meant just one ham. But I do end up buying more than one and sticking the other in the freezer.

    Turkey (from the Meat Hook!), Corn bread and sausage stuffing, homemade cranberry sauce, mashed potatoes, yams, and string beans. Apple/Pecan pie and pumpkin pie for dessert... and I'm going to take a run at making a duck liver pate this year (first time, so we'll see how it turns out.)

    I'm heading to a friend's place this year for probably the first time in my life. It's very weird to not be planning an entire menu.

    I'm bringing:

    Green chile mashed potatoes
    My Grandma's broccoli & creme friache puree
    Some homemade pickles I've been tinkering with (brussels sprouts, shitakes and Korean-style radishes)

    zach, for duck pate, are you using any recipe? let us know how it turns out because that's one of the things i've always wanted to make.

    Shivery, that homemade pickles sound awsome!! is it going to be sweet and sour?

    Ooh, pickled shiitakes? I haven't seen those before, sounds really interesting.

    They came out really great! They're all pickling separately. The brussels are in sort of a giardineira brine, the radishes are in a rice wine vinegar base with some ginger, scallions and lemon peel and the shitakes are polish style with a little bit of whole allspice.

    Making pickles and not just eating pickles is (oddly) a new endeavor for me. I'm clearly obsessed.

    Pickles are so easy and fun!!! Well, I stick to easy refrigerator pickles but still.. yummy and delicious and easy :)

    @mkim - Yeah, I'm using a chicken livers recipe from "French Feasts" by Stephane Reynaud (but substituting duck liver)

    Potato and Celery Root Gratin
    Sweet Potato, Pecans and Marshmallow Casserole
    French Lentils

    Hot Rum Cider
    Spice Wine
    Homemade Vanilla Ice Cream
