Pho (midtown to village)?

Can anyone suggest a place for great pho somewhere between midtown and the village? (Halfway, e.g. flatiron, would be preferable). Bonus points for a good vegetarian pho (no beef/chicken stock). Must have big bottles of sriracha ready to be squeezed! Thx.

    So, I'm pretty sure by definition pho isn't vegetarian.

    Yeah, but I've been to several really good Vietnamese places (not in NYC, because there are none!) that make a version with vegetable broth, veggies and tofu, etc. Even a seafood one with non-meat broth would be cool.

    Have fun. I only go as far as chicken pho. Otherwise beef all the way. ;P

    And I don't see it on the Republic menu.

    traditionally, it has to be beef. but technically, you could call it 'pho chay' as long as it's made with 'banh pho' noodles. where my family comes from, that's how it works.

    we get our fill of umami with dried kelp, deep fried tofu, and dried mushrooms. and a good heap of MSG.

    as for the silky texture of the soup from extracted collagen... substitute with tapioca starch or agar powder depending on what's available. everything else is the same save the addition of daikon or jicama. :)

    If it isn't banh pho noodles, then could it even be considered pho? I believe my friend's family only uses Banh Pho Tuoi when they make homemade chicken pho. Haha. And when the noodles are different, it is noticeable to a real pho consumer. ;)

    Oh great that has pictures of the package of the right noodles. Does anyone know if these are the same noodles in the summer rolls? I attempted to make summer rolls earlier this year and let's just say the wrong noodles made all the difference in the world. Blurgh. Thanks!

    Bún/ rice vermicelli is what goes into the summer rolls. The same noodle they serve dry with grilled meat and/or spring rolls on top and smelly fish sauce. ;P

    Yes... and that link addresses my issue... I thought the summer roll noodles didn't need to be cooked... blegh. Disgusting mess I ate them anyway but COATED in peanut sauce... lol
