People like Maoz Veg, or any of the numerous famous falafel places.

Kwik Meal Cart on 45 and 6th has veggie options. Great yogurt and green sauce. Plus no more long lines!

oh yes, am I being paged? well. I'm a cheap ass so I'm probably not a wealth of info, but if you haven't been to Pick A Pita you definitely should go before you leave midtown. You can always go to Maoz in Union Square, but when are you really going to head up to 8th ave south of Port Authority for a falafel? never. SO GOOD too.

Woorjip veggie kimbap and veggie fritters, and if you eat eggs, those plastic containers with a meal in them topped with a fried egg.

OH! If I were leaving NYC forever and I wanted a Midtown lunch before I went I would want to check if Jamaican Dutchy is still serving that Veggie Sandwich!

Just be careful when ordering Thai to specify that they don't use fish sauce. I once ordered a tofu curry during the full moon and could immediately sniff out the stuff. I ate it anyway because I'm not particularly religious, but I felt pretty guilty about it. :)

I'm fleeing my midtown job for the sunny shores of Stamford after next week, and I feel like I haven't taken true advantage of the wealth of opportunities here in midtown, so I need your help, fellow lunchers.
The major catch is that I'm a vegetarian (though otherwise not picky!), so something fantastic and unique, but meat- and fish-less is the goal, anywhere from 30th to 48th, between Madison and 7th (though I'd go as far as 8th for something earth-shakingly tasty). Must be able to take out, since true lunch hours are frowned upon where I work now.
What do I need to try before I bid midtown lunching goodbye?
