If you're over by Waikiki, there's some really good food sprinkled in among the tourist traps and nonsense.
For low end, Midtown Lunch-ish places, walk down Kuhio, a block off of the main strip. You'll find some interesting budget places that tend towards the crazy Hawaiian fusion culture of mixing ingredients from all over the place into sometimes awesome, sometimes frightening dishes. The Loco Moco is a good example of this - a hamburger patty on a bed of rice topped with a fried egg, and monstrously thick gravy. It might kill you, but it could be worth it.
My wife and I went to Me's Barbecue, it's where my wife and I went to get away from the crappy hotel buffets.
For higher end stuff, there's a bunch of good Japanese food out there. Chibo for Okonomiyaki, Bairin for Tonkatsu and a Yakiniku (Japanese/Korean Barecue) place I totally can't remember.
If you're looking for a bar that doesn't completely suck (there aren't many in Waikiki), hit Rum Fire in the Sheraton on the beach. Much more low key than the fratty over priced places down the beach.
Outside of Waikiki, go to Chinatown for some good places to eat and drink.
I second the recommendation to check out Kathy's blog. I wish I had taken a look while I was out there.

My wife and I were there a couple of weeks ago and sought out Ono Hawaiian Foods (726 Kapahulu Ave., Honolulu, HI 96816, (808) 737-2275) after seeing it on TV a couple of times. We shared a combination plate (kalua pig and pork lau lau) and it was plenty of food for the two of us. It's inexpensive and fast and definitely worth going to.

I'm going to Honolulu this weekend for a week (wedding) - any dining options anyone can recommend in keeping with the Midtown Lunch ethos?
Thanks,
Win
