Kofte at Little Morocco

Can you describe the texture of it? I've been dreaming of Kofte like I had in Istanbul and have tried lots of places, yet to find that amazingly soft, wonderful texture... (and yes I know each country over there has kofte/kefte/kofta/however they want to spell it, and each one is meant to be different, blah blah blah) Mmmmmmm

It was soft because a lot of the Kofte you get here is overdone. He is cooking it right in front of you so as soon as it it ready he takes it off the grill and it doesn't have time to harden up. Not sure if Turkish-style Kofte is the same as Moroccan, though.

I didn't want to start a new thread, but FYI Little Morocco cart is being inspected/fixed up for 1 week starting tonight. A temp cart will be there manned by Omar. Don't worry, it will be back.... So Omar just told me at lunchtime.

A pleasant surprise this afternoon. Recognizing me as a regular, Omar asked me to sample some Kofte he had made and wanted to test out. It is a highly seasoned lamb-beef mix. I was floored. He grills it on the flat-top, adding more seasoning as it cooks and it was just superb.
He said he would be having it available and was selling it as Combos (w/ Chicken or Lamb) as he wanted as many people to try it before he runs out each day. He said he mixes the meat fresh every day and the Combos would be $6 ($1 more than regular Chick/Lamb Combo).
I'll let those of you who can photograph food better than I to submit a pic, but needless to say, it was awesome and I would try to go early in the days to get it before he runs out.
