As a professional traveling nomad without a real desk (aka consultant) i've had the unfortunate opportunity to eat in and around JC on multiple occasions. The Krave truck is great, but they're ADD about when/where they actually show up, so it's not a dependable lunch option.
Lucinda Burrito truck is fairly awful (makes chipotle look good in comparison), though there is a new taco truck along the light rail line near the GS building that looks enticing.
If anyone else knows of a viable lunch option around Exchange Place, please, for the love of all that's holy, let me know.

I like Krave, but it's 2.50 for a tiny taco, and I can easily eat 6 or 7....There is also a guy who makes mexican sandwiches right on top of the grove st path station in the evenings (It's a cart). I got to talking with him and he was a professional MMA fighter that had to retire because of his bad knees.

DO NOT EAT AT LUCINDA BURRITO TRUCK- i found an entire cockroach in my burrito a month or two ago and didn't realize it until i had eaten half the cockroach. how horrendously disgusting.
john's pizzeria isn't bad at all, and they have a great lunch special.
taqueria downtown on grove and grand is delicious, authentic, cheap, and the owner is awesome.
honshu by exchange place is generally decent for sushi, although their service sucks.

@jabry That would have been an excellent opportunity to have channeled your inner Teller and finished the burrito. I like to think that you pulled it off.

Just spotted a new truck, selling Cajun food by the Lucinda Burrito truck on Hudson and York. I opted for the Krave truck instead (fucking delicious), but it looked pretty interesting.

el imperio taco truck @ grove street is by far my favorite in the past 3 years of being in jc.
the fish tacos are absurd. spicy and crunchy and so so so fresh. for their mexican sandwiches they use a very special bread which is made specifically for them. it soaks up all the meat's juices and sauces quite well.I liked lucinda when it was run by the other woman, a FCI grad.
