hmmm i don't see salt in the recipe. must be that beardy dude from throwdown's recipe. i considered it but his focus is on high quality ingredients and i don't have access to tasso nor the $$ to stray far from pathmark. :)

I have used thick cut regular maple ham, and I've used kielbasa for sausage. I also had some hot peppers for my own taste. I'm telling you, when the flavors meld, this is the best dish ever!!!!!

Someone help me here. I'm making a crock for a Turkey Day pot luck and I don't know what a good one is supposed to taste like.
also, i know mara's has a cajun version and acme has a creole. which do you prefer?
