Actually, I'd think we could use more chinese carts. It can't be that hard to make General Tso's from a cart.
A deli cart would be somewhat interesting.

I want a BBQ cart! with BBQ chicken, corn on the cob, watermelon, baked beans, cole slaw and lemonade, potato salad, maybe even strawberry shortcake. Sure, we have the Zigolini's outdoor BBQ in the summer (downtown), but what's better than chicken from a street cart?
Yes! to the chinese cart. A chinese dim sum cart. I know we have the Rickshaw Dumpling cart but I want an authentic dim sum cart with sesame balls, chicken feet, pork dumplings, tea, lotus leaf-wrapped packets of rice and chicken...
And you can't go wrong with a Thai cart either as other posters have noted. satay, pad thai, spring rolls, meat on sticks can't be beat!

The problem with carts, generally, is that once you get your food, there's no place to eat it. The sidewalks are crowded, it's hard to even stand still for 10 minutes, so whatever you get off the cart you gotta bring it somewhere or eat and walk. What I want to see if a cart setup shop somewhere on a large plaza, or something, set up tables and chairs, and run the cart cafeteria style with a wait service. you can serve more food that's not just fried whatever, with rice. This kind of setup would work nicely when they close off broadway to cars in the times sq area.
Everyone who loves carts should go to HK at least once. See how it's really done.

Cosilicious, we clearly work near each other, but if you keep giving away the best spots, I may have to put a hit out on you! ;)
PS I have a friend who has been talking about opening up a (real) Thai food cart for a year now, but isn't sure there's a market for it. I keep telling her there is... I need your help to convince her!

@Yvo - consider it done! I thought about keeping the Elevated Acre to myself, but at least it's still in the ML family. and of course there's always the public space at 60 Wall Street, and the public atrium at 180 Maiden Lane. Another lunch spot secret - if you have a lot of time for lunch - take the free Staten Island ferry over and back. Nice in the summer.

Well, my comment on the 100% Halal cart write up made me think... What would I like to see from a cart in Mid-Town that we don't have... For me:
1. Balut
2. A Chicken Satay/Beef Satay Pad Thai cart
