giant rainbow cookie/cake

wow! I am VERY impressed. It looks beautiful. How did it taste?

it was delicious but i think it dried out a little in the fridge because I didn't wrap it properly for that overnight press. 30 seconds in the microwave seemed to resolve that along with some raspberry jam.
i've already given it all away. my dad had 3 helpings. :) i'm going to aim bigger for the holidays.

Pretty, but too many colors for a real rainbow cookie cake.
I have actually seen this before - both from a bakery and homemade. I have a recipe for it as well - only 3 colors (well, technically 2 layers get colors, one stays white). The recipe I have also uses both apricot and raspberry - they both work well.
Interesting choice to use chocolate like that - my recipe has a ganache topping - definitely less time consuming than what you put together. Something to think about for next time.

I'm pretending that layer on the bottom is a pink layer for me? Hahaha...
Also, you don't like taro filled cake? Maybe it's because we normally had the same cake but filled with that nasty fruit cocktail (from a can/jar) mixed with whipped cream (also from a tub I think - Cool Whip, I believe)... the taro cake was a welcome relief and treat :)

Susan, thanks for the input. I actually considered ganache but I didn't have/want to buy cream. And I figured it would be too sticky for finger food.
Also, going with modeling chocolate was my attempt at hitting 2 birds with one stone. I've always wanted to play around with fancy cake decorating ingredients. :)
The choice of colors were actually discussed in another thread. No offense to Italy -- they've got a beautiful flag (awkward comment) -- but I didn't want my cake to look like a traffic light.
yvo, yes that pink is for you! (but really i just didn't add enough red.)

ugh. that fruit cocktail cake was a blight throughout my entire childhood. especially those halved strawberries and crunchy canteloupe balls.

What! I loved the weird glazed canteloupe and honeydew balls on top of the cake! It was the weird peach/grape/not-really-cherry/pineapple? what's in a can of Dole fruit cocktail anyway?/stuff inside the cake that grossed me out. Hahaha good times.

i think my version had pears in it.
the cantaloupe balls on the cakes i've had were never glazed. they were just hard like unripe fruit. either way it was gross. grossss. whoever came up with that cake should be shot.
i don't really hate taro cake. i just got sick of it after eating it 4 years in a row. :)

Ah, the canteloupe I had was generally covered in this weird layer of see through jellyish - in fact, I think it was clear jello?! - stuff that I thought was sugar as a kid. But it's not. Kind of like on the Chinese fruit tarts... and yes, whoever came up with that cake should be executed, Communist China style...
I never get to eat taro cake because the kids in my family are really outspoken and demanding, we all wanted ice cream cakes even though we were born in the cold months (my birthday is the warmest usually and I'm born in October). Mmm I want taro cake now... wonder if they make small ones.

good question. but i'm going to go out on a limb and say no they don't. :P guess you'll have to be more persuasive when your time comes around.
maybe my parents and uncles loved it because it's not super sweet. i can't take it anymore. unless they up the sugar or use a different potato like those okinawan ones. thooosee are super sweet and delicious

Haha... my birthday was yesterday. No cake.
I don't like sweets that much anyway... I'll go make a really Asian friend and just hang around till their bday and buy them a taro cake... lol so I can have my one slice!

Besides, in that case, I could just buy a full size one, eat my slice, and throw away the rest, and still be more cost effective than paying my "friend" to make a mini one for me. :PThanks anyways!

Good lookin' cake for home-made.
I like almond a lot too. Any possibility to make each layer of cake into a different flavor/ fruit? Now that's asking for more love...and efforts!Happy Belated Bday Yvo.
I've been deprived of birthday cakes as a kid. My first cake came from my friends last year - a Magnolia chocolate fudge cake. So I'd be down for the chinese fruit-cocktail cake or taro cake (I don't even think I've ever eaten?) Haha.

thanks. i've been asked to make it in different flavors but i'm not sure i'd know what combination would work best... and i'm reluctant to stray far from nuts (pause)
do you think they make pistachio paste? i know there's a recipe on fxcuisine but it has almond in it...
or cashew or pecan paste. or hazelnut! oh man hazelnut paste would rox my foxing sox off.

oh.. $50 for 2.2lbs. :( i wonder if i can make my own?

I was talking to my sister today about cake and the one I actually meant isn't taro cake, it's chestnut filled. I would not like a taro cake. Unless you also meant chestnut...?

Deanlo - I just saw pistachio paste for the first time yesterday! I saw it at Brooklyn Larder on Flatbush, which is a pretty awesome place to check out anyway, if you're ever in the neighborhood.

The retail section is actually much bigger than the cafe area, but they may be marketing that part more to get a bit more foot-traffic. I was just there yesterday and they are extremely cool. Tons of cheese knowledge, lots of great imports and they house-make all their cured meats. They also make their own pickles which I (obviously) stocked up on.
