&#60;p&#62;sushiburger - some employers don't fill in the gap as we have seen by certain restaurants getting sued in the past few years...&#60;/p&#62;
&#60;p&#62;Full disclosure, I bartended in Howard Beach, and on a slow night, would make about $10 an hour with tips.  On a good night... I think the most I ever made was probably $40/hour.  It was hard being on my feet for 10 hours straight though.

			<description>&#60;p&#62;If wage + tips &#38;lt; minimum wage, the employer is required to fill up their wage to meet the minimum wage. If a server makes less than the minimum wage per hour after tip, the employer will fill in the gap. However, I assume that any employee that is that bad that they can't make it up in tips usually will get fired (which is what we want, weed the bad employees out).

			<description>&#60;p&#62;Going out to dinner is about the experience.  You are there to enjoy food, drink(s), environment; fun (except for that bank lady who according to her profile pic should be in sex work and not a teller or whatever she is) and having someone(s) take care of all your needs.  We have all had bad service, bad food or bad drinks those are what might warrant a below 20% tip.&#60;br /&#62;
Yes, servers often make more than the kitchen but ask a server who works a Monday lunch who feels secure on paying rent. The person with an hourly/salary check or banking on tips.&#60;br /&#62;
Can you open your own bottle of wine? Drive a cab?  GREAT! Do it that $1000 bottle of wine is likely available at your local liquor store for $300.  Open it yourself in your apartment and servers across the City will rejoice.  Buy a car drive yourself!  Do it!&#60;br /&#62;
Tables/bar stools at restaurants are real estate and you want the best client/guest/customer to take it.  That doesn't necessarily mean the best tipper but guest who WANT to enjoy the experience, try something new...I don't know...not be a complete hand job that looks down at the human &#34;handing&#34; them a plate of food.&#60;br /&#62;
Tipping is part of the culture.  If you'd prefer servers make an hourly minimum wage like in Europe... Have you been to CVS lately?  Yep it would be a lot like that.

			<description>&#60;p&#62;each State's labor laws are a bit different from each other.  NY labor laws require all employees to be paid a minimum wage but in service industries like restaurants and hotels it's a bit different.  The employer can hire you at a $4/hour rate and b/c it is assumed and expected that the waiter will get tips the State will recognize the combining of wage+tips  as meeting the minumum wage standard.  at the end of the night, most servers will make more than $7.25/hour but the hourly wage they receive is much less.

			<description>&#60;p&#62;mkim, average servers in the city make about $4.00-$5.00/hour + tips.  and the tips are pulled and distributed by number of staff and hours you work.  as a server, you may bring in 20%+ on each of your tables but many times you wont be going home with 20% of the tips you made b/c tipping out the other staff.  bakers, line cooks, and sometimes bartenders generally get tipped out by the waitstaff.  and in my experience, in the restaurants ive worked at, the back of the house has better benefits than the front of the house, like options for healthcare and paid time off.  not all, but the finer establishments tend to.&#60;/p&#62;
&#60;p&#62;and wait staff can also be laid off any day.  the turnover rate is much higher than the kitchen.
