@ncsuemme – Well, the point of the article was actually to show that street vending is really not a big money making operation… even if your food is amazing. It’s more geared towards high volume, cheap products, sold by people who are willing to work long hours for really low wages. That’s what street vending has always been, and it will probably remain that way…

The real problem for the new vendors is that if they do, in fact, find a way to be very profitable on a large scale, the businesses that pay exorbitant rents for Midtown spaces will make sure that the government legislates them out of business. You can’t have chefs finding a way to open “restaurants” without paying rent to building owners. The property based portion of the NYC restaurant economy would collapse…

Definitely an interesting read. I also think that capitalism will play a part in hopefully making better food options. The new trucks that aren’t up to speed on quality, location, etc, will die. It’s not necessarily a nice thing to think about, but if you’re going for an ‘upscale’ or hip truck but aren’t delivering on the food, people won’t come eat.

Formz: I frequent “The Merchant” and “Barrow St. Bar”, I skip past “The Majestic” waaaay to yuppie and over-priced.

You are really near Grand Sichuan’s Jersey City branch, which f’ing rocks. You should also check out “Sava” which is a Polish place. The old lady (Maybe 75 or 80) makes everything by hand….pirogies!

I second Monique, I really enjoyed the article. It reminds me of a really good article in Slate, from 2005, about the economics of opening a coffee shop in NYC . The main problem is NYC. I love this city but making money in the food industry here is close to impossible. BTW, I learned that the hard way...
