The real problem for the new vendors is that if they do, in fact, find a way to be very profitable on a large scale, the businesses that pay exorbitant rents for Midtown spaces will make sure that the government legislates them out of business. You can&#039;t have chefs finding a way to open &quot;restaurants&quot; without paying rent to building owners.  The property based portion of the NYC restaurant economy would collapse...</description>

		<description>Definitely an interesting read. I also think that capitalism will play a part in hopefully making better food options. The new trucks that aren&#039;t up to speed on quality, location, etc, will die. It&#039;s not necessarily a nice thing to think about, but if you&#039;re going for an &#039;upscale&#039; or hip truck but aren&#039;t delivering on the food, people won&#039;t come eat.</description>
