I think the Treats Truck is the best at roving. Kim updates the phone message every day with the location so for those of us without iPhones or Blackberries, it's easy to find her location by just calling the number.

The reason they changed locations is because they found out that where they were previously (52nd and Lex) was not exactly... legal. So now they have locations where they are actually allowed to park.

I have to say that roving trucks are very annoying. It gets the food out to a potentially larger audience, but doesn't help build a repeat following.

I knew that there was a rickshaw dumpling truck, but only had the chance to try it recently when I happened to walk past it. They told me to take note of their parking schedule.

I don't want to have to carry around a calendar/day planner/check a website so that I can remember when a truck is going to be parked in a particular spot when I have the urge for their food.

Pick a spot and integrate into the local community. If you have good food, you will build up a following and people will travel for your food.
