I read he lives in MD. I agree with ben this guy is a pain in the keister.  Now shilling his Walmart recipes on here. Maybe where he lives that is all you can get is Jimmy Dean rolled around in Shake and Bake. We live in NYC, we have every food known to modern man at our disposal. I think you are on the wrong blog Doc Chuck. You just stir the shit.  Is there a blog for some city close to you like Baltimore? Why can&#039;t you go piss them off?

		<description>I had to call up an old recipe of mine which was our contribution to the New Year&#039;s Eve party at the Clubhouse.  It is a recipe for one of our favorite appetizers that Dr. E. and I have been enjoying for over 20 years -- long before the New Yawk City internet crowd ever heard of them.
And way before the aforementioned  individuals bastardized the Texas original, calling them ABT&#039;s (Atomic Buffalo Turds), wrapping them in bacon, and otherwise attempting to copy Texan&#039;s tastes, but generally screwing them up as the New Yawk City crowd always does.
Armadillo Eggs:
½ to ¾ pound Monterey Jack cheese
1 pound bulk hot sausage (Jimmy Dean brand recommended)
1½ cups buttermilk biscuit mix (divided into 3 equal parts)
15 medium canned, pickled jalapeno peppers
1 package (2 envelopes) Shake-n-Bake® for pork
1-2 beaten eggs

Mix together thoroughly:   ½ pound grated cheese and ½ pound bulk sausage, then add 1½ cups buttermilk biscuit mix (divided into 3 parts), adding each part separately.
The mixture will become a very stiff dough and should be kneaded for several minutes.  Set aside.
Slit and seed the pickled jalapeno peppers.  Stuff each pepper with a piece of Monterey Jack cheese and pinch the pepper closed around the cheese.
Pinch off a bit of the cheese-sausage-biscuit mixture and pat into a flat pancake about ¼-inch thick.
Place the cheese-stuffed pepper in the middle of the pancake and wrap pepper completely with dough, being sure that all edges and ends are completely sealed.
Roll the dough-covered pepper back and forth in your hands to mold the egg shape.
Roll each &quot;egg&quot; in Shake-n-Bake for Pork  until coated.  Dip armadillo eggs in beaten egg and then in Shake-n-Bake  again. At this point, the armadillo eggs may be either baked or frozen (for future use).

To Prepare:  Bake in a medium oven (350° F.) about 20-25 minutes.
If cheese begins to bubble out, remove from the oven.  The &quot;eggs&quot; will seem soft to the touch, but upon cooling will firm and crust nicely.
Best served warm.
