Cooking redmeat to medium-well (past 160 degrees) reduces its flavor but ensures that centrally processed meats are not tainted by feces and disease. Having a policy that prohibits cooking meat to a lower temperature suggests (to me) that they do not trust their meat suppliers. Bacon, still not categorized as a redmeat, tastes better cooked to a higher temperature. What does one have to do with the other? Bravo on the meaningless ad hominem.
